This chicken and vegetable soup is the perfect snowy-day recipe.
When the weather gets cold there’s something magical about having a warm bowl of chicken and vegetable soup.
This recipe is simple, yet delicious and flexible so you can easily make it fit your dietary requirements just by swapping out the orzo for rice or leaving it out all together.
And if there’s leftovers it’s the perfect freezer meal for later.
Here’s the recipe.
Ingredients
- 1 onion diced
- 1 bunch of celery (about 7 stalks) chopped
- 1 pound of carrots peeled and round diced
- 1 Tbs butter or any cooking fat/oil
- 2 tsp salt
- 2 tsp ground black pepper
- 8 cups of liquid- Any combination of chicken broth, bone broth, or water will work
- 1 Tbs minced garlic
- 1 bayleaf
- 4 chicken breasts or about 2 pounds of chicken
- 2 tsp each dried dill and parsley- fresh herbs would be very good also
- 1 Tbs lemon juice
- Optional 1 ½ cups of orzo pasta or rice
Instructions
- Turn pressure cooker to saute mode. Add butter and all vegetables (should total about 8 cups) until they begin to soften (around 10 minutes). Add salt to veggies as they cook.
- Place chicken breasts in pot and add liquid. Add minced garlic, black pepper, and bayleaf to the pot and lock the lid. Cook on soup mode for 30 minutes. Even if your chicken is frozen, this will be plenty of time to fully cook.
- Remove chicken and shred. Remove bay leaf and discard. If you would like to add orzo pasta or rice, switch pressure cooker back to saute mode and pour in grain. The pot will quickly come to a boil. Stir frequently so that the grains do not stick to the bottom. Cook approximately 6 minutes and then turn pot completely off. Add back in the shredded chicken, herbs and lemon juice. Salt and pepper to taste.
- If adding pasta or rice, your soup will thicken. I like to add 2 more cups of water to the pot in order to have more broth.
- *save your veggie scraps in the freezer for your next batch of homemade bone broth!
- **This recipe is very large in order to have leftovers for freezing. It could easily be cut in half
