Ingredients
- 2 8oz filets of King Salmon (any variety of salmon will do)
- 1/2 tsp salt
- 1/2 tsp pepper
Instructions
- Prep the salmon. If frozen, allow to thaw at room temperature until soft all the way through. If you have fresh-caught salmon (no store bought) check each filet for bones and remove any you find.
- Lightly coat meat side of the salmon filets with salt and pepper.
- Put skillet on stovetop and turn to medium-high heat. Add tbsp coconut oil and spread with spatula to cover the entire bottom of the pan. This will help prevent the salmon from sticking when it's time to flip.
- Add salmon to the skillet, skin-side up. If you're cooking more than one filet make sure you leave enough space for each filet to lay flat so that the skin can sear evenly.
- Cook for 5 minutes or until the salmon starts to turn light pink 1/4 of the way up from the bottom of the filet.
- Flip all filets so that the skin side is down. Cook 5 more minutes or until the entire side of each filet is light pink. The goal is to remove the salmon just before it's cooked to allow for the residual heat to finish cooking each filet. There is a fine line between perfectly-cooked and overcooked so err on the side of taking the salmon off too early, and move back to the skillet if necessary.
